1) Hit the arrow next to your clock in the bottom right of your screen similar to the following screenshot.
2) Right click the icon with the Blue or Grey "S" symbol and hit "Scan Button Settings..." as in the following screenshot,
3) Uncheck "Use Quick Menu" in the top left as in the following screenshot,
4) In the Application pane, click the dropdown menu and change it to "None (Scan to File)" as in the following screenshot,
5) Click the Save tab, and change the Image Saving Folder to "C:\Scans" as in the following screenshot,
6) Now switch to the "Scanning" tab. Change Scanning side: from Duplex Scan to Simplex Scan as in the following screenshot,
7) Hit the Apply button in the bottom right and then hit OK to close the window. Your scanner is now configured!
Alternatively below, is a basic batch file. Extract both files to the same folder, run the SetScansnap.bat file and it will configure the application for you. After running, you'll need to either restart your computer or browser through the start menu and restart the application "Scansnap Manager"
